Yes, you probably can run slightly larger than stock injectors. You’d probably be okay with 320cc/min units. You will have to re-terminate your injector harness and add fuel race spacers to get it to work though.

Larger injectors may or may not increase MPG. Since they injector fuel with a faster rate-of-discharge, that means that they take less time to deliver X amount of fuel. That means that a higher percentage of the fuel is injected near TDC, when the intake charge is hottest. This can mean a more complete or faster burn.
