Never put cold milk in hot coffee. Ever. We really can’t stress this enough. It kills the flavour of the coffee, smothering the more delicate flavours of your brew and quite frankly ruining what should be a lovely cup of coffee.

If I had a hot cup of tea and I added to it cold milk, what would happen is that tea will lose some of its thermal energy to the milk. After all, the total thermal energy of the system (the cup) is conserved even if there has been a transfer of heat between the two.

The sum of the changes in the thermal energy was equal to zero. The change in thermal energy of the water was dependent on the mass, the specific heat of water, and the change in temperature. When you mix cold milk with hot coffee, you expect the cold milk to warm a bit and the coffee to cool a bit.

By dilution with something that’s colder than the coffee (milk); and by losing heat to the environment (through conduction and convection). If we can assume that the milk will be the same temperature no matter when we add it, then the coffee will stay hottest if you put the milk in right away.

So, because milk has lower specific heat capacity than water, for the same amount of heat energy released, the decrease in the temperature of milk will be greater than that of water. Therefore, when observed under similar conditions, milk cools faster than water.

Brew the tea first, add milk after. Don’t put milk in it while it’s brewing. If you want to have the milk cool it down, great, just add cold milk. If you want the temperature higher, you should steam the milk before adding it.

When you put milk into infusing tea you lower the temperature of the water so a proper infusion can’t take place. To get the best of your brew in a mug, always make the tea first to your taste and strength and the milk after.”

The answer is that in the 17th and 18th centuries the china cups tea was served in were so delicate they would crack from the heat of the tea.
