Likely could be either entity cap issue and/or despawned villagers. Have any Golem’s spawned and stuck next to the villagers that will prevent them from spawning more, or have villagers disappeared/despawned I have had that happen in the past. Villagers do tend to despawn.

I think the best way is to obtain a lead and attach them to a fence outside your entrance or door. Iron golems are 1.4 blocks wide and 2.7 blocks tall, meaning that you can have a wall around your house with gateways 2 blocks off the ground so iron golems can’t get out.

All mobs eventually “die”, it’s not because there is any particular way that the environment kills creepers/spiders which is unlike skeletons/zombies with sunlight. Rather, it’s for the sake of efficiency, as the game has a set limit of number of active mobs.
