Lobster does serve up a high dose of sodium, however — nearly half of the recommended daily amount for healthy diners. That can be dangerous if you have high blood pressure. To enjoy lobster at its most healthful, boil or roast it. Resist the temptation to add buckets of melted butter, and definitely don’t deep-fry it.

Lobsters are harvested year-round in Maine and New Hampshire. However, the majority are caught between late June and late December when the lobsters are the most active. Lobsters are also harvested during the winter and early spring months, but in smaller quantities.

A combination of the lobster life cycle, over-harvesting, and food-safe technology have led to an uptick in lobster prices over the past few decades. What was once a “poor man’s food” is now a delicacy that can take a lot out of your pocket just for one meal.

Warm water lobsters typically come from places like Florida, the Caribbean and Latin America and tend to be softer and more difficult to firm up even when cooked properly. Cold water lobster tails will almost always be more expensive than warm water lobster tails, but for good reason, they taste better.

Brush the lobster with melted butter, and season with salt, pepper, and paprika if desired. Place lobster tails in a baking dish, then add just enough water or wine to cover the bottom of the pan, about ½ cup. Bake until the flesh is firm and pinkish-white, about 1 to 2 minutes per ounce.

Slip the tip of kitchen shears or heavy scissors into the middle of the hard rounded side of each lobster shell and cut down all the way to the tail fan, being careful not to cut meat. Cover and steam until meat is just opaque and very plump, 5 to 6 minutes; do not overcook or meat will begin to shrink and dry out.

Cut the top shell of the lobster tails lengthwise down the middle with kitchen shears. Then, using a knife, cut all the way through the tails to split into 2 pieces.

Preheat oven to 450°F (230°C). In a small bowl, combine the butter, salt, pepper, garlic powder, paprika, lemon juice, and parsley, then brush the mixture evenly over the lobster meat. Place the tails onto a baking sheet, then bake for approximately 12-15 minutes, until the lobster is fully cooked but not rubbery.

Boil lobsters for 10 to 20 min, depending on size: Note the time at which the water comes to a boil again. From that point, boil the lobsters for 10-20 minutes or longer, depending on the size of the lobster. 10-13 minutes for 1 lb lobster, 12-18 minutes for a 1 1/2 pound lobster, 18-23 minutes for a 2-3 pound lobster.

Preheat your grill for medium-high heat — 400-450°F. To prevent curling, you can skewer the tails. Once the grill is nice and hot, add the lobster tails. Place them “cut side down.” Cook until the shell turns bright orange.
